Visiting Weekend and ANZAC Biscuit Recipe

DS and his family live about 500 km away from us. We often drive there to visit them. Last weekend was the first time we traveled there in my new car that I got at Christmas. The car performed excellently and it was more economic than the 4 x 4 we had. To make the trip interesting we listened to a talking book and I took my stitching or knitting to do on the trip. We also took a picnic basket and stopped on the way for cup of tea. It was an easy drive on the highway. We had a good trip.

It was worthwhile driving there just to see our DGD and get lot of cuddles with her. DGD turned one in January. She is active and inquisitive in exploring her environment. She can climb up and down a few steps by herself. There she is checking out everything that passes.

Cottage garden in the backyard of DS's house. My DIL is a keen gardener. Her garden is full of flowers, roses and fruit trees. She has many varieties of vegetables growing in her garden too. They also have two hens that give them plenty of blue eggs for breakfast.
I took along the basket blocks to stitch on the journey. I haven't made much progress from the last time I posted about these basket blocks. I think I did three more blocks on the trip. I can't read in the car, but I can stitch or knit. It's handy to be able to stitch because you can't do anything else except drive or sleep!

I like to take them home baked biscuits. This time I baked DIL's favorite ANZAC biscuits. Here is the recipe just in case you would like to make Australia's favourite biscuit:

ANZAC Biscuit
1 cup rolled oats
1 cup plain flour
1 cup brown sugar
1/2 cup coconut
1/2 teaspoon salt
125g butter
2 tablespoons honey or golden syrup
1/2 teaspoon bicarbonate of soda
1 tablespoon boiling water.
Combine oats, shifted flour, brown sugar, coconut and salt and put it aside.
Put butter and honey in microwave able mixing bowl and microwave for 1 minute on high.
Mix bicarbonate of soda with boiling water and add to melted butter mixture and stir well
and then add to the dry ingredients. Take teaspoonfuls of mixture and place on lightly
greased oven trays. Bake in slow oven temp. 160'c for 20 minutes.

On Saturday we went to a farmer's market and YMCA market. In the afternoon we took DGD for a walk to the local library. She loves being carried in a baby carrier and fell easily asleep on the way home. We left after lunch on Sunday driving home into the Sunset..!
