My friend Fiona has been an organiser for the event at the library ever since I started working there 5 years ago. I have always been helping in both baking for it and helping out on the day. It has been the most successful event of the year for the library.
Last year's photo of the helpers at the Australia's Biggest Morning Tea
We had to wear aprons and gloves when we were dealing with food and beverages. I urged everyone to line up for photo shoot before the crowd arrived.
This is my contribution for this year, four dozen chocolate chip cookies and I thought it is a good chance to give you my favorite chocolate chip cookies recipe here as well:
125g (4oz) butter
1/2 cup sugar
1/2 cup brown sugar, lightly packed
1/2 teaspoon vanilla
1 egg
1 3/4 cups self-raising flour
dash of salt
125g (4oz) chocolate chips
60g (2oz) walnut pieces, I sometimes use macadamia nuts in place of walnuts.
Cream together butter, two types of sugar and vanilla. Add egg beating well. Mix in shifted flour and salt. Add chocolate chips and chopped nuts, mix well. Shape teaspoonfuls of mixture into small balls, place on lightly greased oven trays, allow room for spreading. Bake in moderate oven 10-12 minutes.
It is not a morning tea without homemade scones. I was given this never fail scone recipe by a quilter friend and I can assure you, you do not have to be a good cook to make them:
3 cups self-raising flour
1 cup cream
1 cup lemonade
Combine the above ingredients, roll and cut with cookie cutter. I brush the top with a little milk. Bake at 200'C for 10 mins or until done. Serve with strawberry jam and cream.
